Passion Fruit Mousse

One of my all time favorite things in life is Passion Fruit Mousse. Has anyone ever asked you the question, "If your house was on fire and you could grab 3 material possessions, what would they be?" I can't exactly pin down my three, but if I had passion fruit mousse in the fridge I may be standing in the street eating my mousse and watching my photo albums burn. That being said, I think you now know how much I love the stuff.

I don't really follow a recipe per say, but I do know this. You need equal parts cream and equal parts sweetened condensed milk. I like to use Mexican crema (table cream). I normally buy a small can of crema and a small can of sweetened condensed milk. The passion fruit concentrate is really up to you. I normally start with a 1/2 cup and then add more to taste. I like mine a little strong, but really it's up to you. The hard part of this recipe is finding the concentrate. We have some in our local grocery store, but you may need to go to a Latin market.Then you throw it all in a blender for about 5 minutes and really let it fluff up and get mousse-y. Then stick it in the fridge for a few hours. I know this isn't an exact recipe, so I'll try and give you one, but know that you don't have to be exact.

Ingredients
1 Small Can Mexican Crema (or heavy whipping cream )
1 Small Can Sweetened Condensed Milk
1/2 C Passion Fruit Concentrate (or more to taste)

Directions
Mix all ingredients in a blender or food processor for about 5 minutes. Place mousse in the fridge and let set for at least 4 hours or over night.
