We have really enjoyed our CSA membership at Great Country Farms this year. Holli and Charly have enjoyed going each week to pick up our produce. Today Charly ate her weight in blackberries as she picked away! One thing we have had an abundance of is squash and zucchini. We have had to get creative with our meals to use all of it. This is one of the best ones we had yet!
The patty pans were perfect for stuffing and hollow out really easy with a spoon. The original Martha Stewart recipe called for using yellow squash, but I thought the patty pans were a better choice and could hold more filling.
We also had a lot of left over filling so we froze it and used it the next week. Actually I think these pictures were from the batch that used the frozen filling. I even read some where that you can fill the patty pan and freeze the whole thing. I think we may do that so we can use it on those days when we are too busy or tired to cook.
In the end we topped it with a little bit of sour cream and cilantro. This was a really easy and cheap meal to make. With the ability to make a bunch and freeze it this meal was a huge winner for us! So here is the recipe we used. Give it a try and let us know what you think!
