Peanut Butter Cookie Cups with Nutella and Banana

You guys. I'm the worst friend ever. Worst blogger friend ever. I made these cookies back in June and I'm JUST NOW telling you guys about them?! Lame. I'm sorry. Sorrysorrysorry.

I have this thing where I think I have to write up some well scripted post with tons o pictures and make it all perfect. You know what happens when I think things have to be perfect? Nothing. Nothing happens. No posts. A boring blog about nothing... except for my dear Charly because I can always post about that girl. So consider this an apology and warning... you may be getting more posts but I'm not making any promises about quality.

Oh yes, but the cookies. The cookies!! These came about when Matt's sister Nikki was visiting before she left on her mission. Nap time led to Pinterest time and before you know it our brains concocted something that needed creating. IMMEDIATELY.

Many of you may have seen this picture floating around Pinterest:

It is a recipe for Nutella cookie cups. Great idea. Wish I had thought of it myself. Problem is, the recipe was a chocolate chip cookie recipe. Nikki and I were having none of that. Nutella and peanut buttter- they belong together! Why would you not make peanut butter cookie cups with Nutella?! This idea was a stroke of brilliance on our part, I think. The true stroke of brilliance, though, came when Nikki, in a sleepy stupor, mumbled to me something about banana slices. Peanut butter, Nutella, banana?! Yes. That is, in fact, one of my favorite sandwich combinations, so why not throw some banana in them cookie cups?

I'm not so big on writing up recipes, and since the info is already published on the internets, here are some simple directions with links to the recipe posts

Peanut Butter Nutella Banana Cookie Cups

Make this peanut butter cookie dough from Cooking for Engineers- and can I say, I wish all recipes were in chart form. So easy to follow! PS these are also the best peanut butter cookies I've ever had in my life. Ever.

Follow these directions from Daisy Chubb to form the cookie cups

Use the soft and chewy variation on the peanut butter cookie recipe if you like them like that (I do) or the other way if you are a robot.

When they are done baking and you've pressed them with a shot glass (or spoon, in our case) put a single slice of banana in the bottom of each cookie cup, then fill with Nutella.

Try not to eat the whole batch. Sorry bout the whole "one cookie in the middle of a plate" thing... by the time we could take a picture this was all that was left!

PS: Since we are sharing cookies, or at least cookie recipes, I feel compelled to share this Sesame Street spoof of Call Me Maybe. We watch/sing this on a daily basis. I mean Charly does. Yeah. Charly. It is her favorite thing ever!
