Sweet Basil Ice Cream with Honeyed Pine Nuts

This is another "how-did-I-not-share-about-this-earlier-this-ice-cream-changed-my-life" sort of posts. Sweet basil is one of a few flavors that we have actually repeated because it was just too good to forget about. Or at least, I couldn't forget about it. Matt thought it was good. I get a crazy look in my eye when I smell fresh basil and start salivating because of this ice cream. No, seriously, we have been getting basil from the farm each week, and all I can think about when I smell it is ice cream.




I love that this is a kind of play on pesto- using the praline pine nuts as a mix in. The praline turned almost gooey so there were little pockets of sweet carmel goodness around the pine nuts. Pine nuts are not cheap but so worth if for this ice cream. Perhaps another soft nut would work, like walnuts or pecans if you just couldn't stomach the cost (or couldn't find any, or are allergic). Anyway, this is my favorite ice cream, nay, favorite dessert, EVER! 


This is another fabulous flavor from Jeni's Splendid Ice Creams at Home. I think this book should be owned by anyone who owns an ice cream maker. It is one of the best gifts I've ever given and probably our most used cookbook, to be honest! You can find it cheaper here on Amazon. So you should buy it.
