Cuban Wings!

I'm sitting here watching dirty jobs and trying to keep my food down. What did I eat you ask? I had two peices of pizza for lunch and another peice of pizza for dinner along with some triscuits and ice cream. Now I know that everyone thinks that we in the Coats household eat like royalty, but today Holli is at a training and I am all by myself tonight. I am writing tonight because I have nothing else to do. SO now all three of our readers get a Cuban Wing Recipe. BBQ Chicken is one of my least favorite things to cook on the grill because I love red meat. This recipe however is up there with a good steak in my opinoin. The marinade has so much flavor it will make your taste buds explode! Add in the smokey flavor from the BBQ and it is Wing Heaven. This recipe is so good I think I want to make it next week, let's see if Holli will go for it. Also if anyone tries a recipe let me know what to think. This blog will be in vain if no one tries anything.


Cuban-Style Wings


Ingredients
1/3 Cup orange juice
1 1/2 Tsp. Grated lime peel
2 Tbsp. Fresh lime juice
3 Tbsp. Extra virgin olive oil
1 Tbsp. Chopped cilantro (optional)
1 Tbsp. Grated onion
1 Tsp. Peeled grated gingerroot
1/2 Tsp. Ground cumin
1/2 Tsp. Oregano leaves
6 Cloves garlic, finely chopped
2 Lb. Chicken wings, tips removed, if desired

Directions
Combine all ingredients except chicken in bowl of food processor or blender; process until blended. Place wings in large resealable plastic bag. Add marinade; toss to coat. Refrigerate at least 8 hours or overnight, turning occasionally.
Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Remove wings from marinade; discard remaining marinade. Place wings on grill. Grill covered 16 to 20 minutes or until tender and no longer pink (170°F), turning once or twice.
