Garlic Lime Flank Steak with Chimichurri

Flank Steak has always been a treat in the Coats' household growing up. I was one of my Dad's specialties. We would always have it with rice pilaf and ranch beans. I honestly believe if my Dad cooked 12 flank steaks my family wouldn't stop eating until we finished it all! Of all my flank steak memories growing up, the one memory I can't remember, is eating flank steak leftovers. I don't think it ever happened. The hard thing about grilling meat is you have to keep an eye on a lot of things at once. The beauty of flank steak is it is one huge piece of meat! I decided to take a family favorite and give it a little twist! My Dad would marinate his steak in teriyaki sauce. Because I was cooking for someone with a Gluten allergy (Yes this recipe is gluten free) I couldn't use anything soy sauce based. So I used a simple garlic and lime marinade. I then topped it off with a vibrant fresh tangy chimichurri sauce. It was awesome!

Cuban Wings!

I'm sitting here watching dirty jobs and trying to keep my food down. What did I eat you ask? I had two peices of pizza for lunch and another peice of pizza for dinner along with some triscuits and ice cream. Now I know that everyone thinks that we in the Coats household eat like royalty, but today Holli is at a training and I am all by myself tonight. I am writing tonight because I have nothing else to do. SO now all three of our readers get a Cuban Wing Recipe. BBQ Chicken is one of my least favorite things to cook on the grill because I love red meat. This recipe however is up there with a good steak in my opinoin. The marinade has so much flavor it will make your taste buds explode! Add in the smokey flavor from the BBQ and it is Wing Heaven. This recipe is so good I think I want to make it next week, let's see if Holli will go for it. Also if anyone tries a recipe let me know what to think. This blog will be in vain if no one tries anything.

Great Steak Recipe!

Summer is here and it is time to dust off the grill…personally I love to grill year around. I will tromp out in the snow if I have to. This dish is one of my favorites and here are my reasons why: 1) Most importantly it tastes great. 2) It uses few ingredients. 3) It is fast. 4) It is really easy. 5) Least importantly it is healthy. The Veggies give the steak a lighter taste and the balsamic gives it the right kick! It also looks kind of fancy and is a different twist on a BBQ steak!

Here are some tips to grill a great steak. Make sure the grill is clean. If you don’t have a grill cleaning utensil try balled up foil. Heat up your grill ahead of time. When you are ready to put your meat on put some olive oil on a paper towel or old rag and use your tongs to brush it on the grill, this will prevent the meat from sticking. Also try not to turn the meat too often. Try to cook meat on a lower temp to avoid burning the outside and under cooking the inside. Another Helpful hint is to look up online how long you should cook the type of meat you have. One thing I should get is a meat thermometer because I always wonder if my meat is over cooked or not. When grilling the Veggies for this recipe I found it best to put a disposable foil pan on the grill because it is less messy. Enjoy and let me know what you think if you made this.
