Fathers Day Pizza

Forgive me for my aloofness of late. I've been preoccupied with the babe. She's had a rash that I haven't quite figured out (we'll probably visit the doc soon) and her habits have been changing, probably because she is starting to teethe. Her sleep has been wacky and frustrating, mostly because I'm used to her sleeping through the night (don't hate me other moms of young babies!) and now she isn't. Anyway, the reality is, life happens sometimes, and although I love blogging and try to have a post every weekday, it is still a hobby and has to take the back seat sometimes. That being said, I feel like I still have things to share from last week, including a failed sewing project that took the better part of an entire day and had me really upset by the end of it. Excited!?

For today, though, I have some eye candy in the form of our Father's Day meal yesterday.

That, my friends, is a Bacon, Pear, Gorgonzola and Onion pizza that I made for my awesome husband to celebrate his first Fathers Day. It was divine.

I didn't have a recipe, but I got the idea from a pizza my sister-in-law Candice made a few months ago. She caramelized the onions (which was awesome, I totally recommend it) but we didn't have enough onion for that, since they shrink down quite a bit when caramelized, so I improvised. I added maple bacon (come on, we are totally bacon people) to make up for the sweetness and richness that we lost by not caramelizing the onions. I also added fresh mozzarella. No sauce, just drizzled olive oil and garlic on the crust. It was, as they say, the bomb diggity.


Now, I'm totally not the creative cook here, but pizzas are totally versatile! I do well with burgers and pizzas because you can add a whole lot of stuff without messing them up. The skill level required is minimal and you can still get awesome results, with really creative flavor profiles. I basically want to make pizza every week.

Anyone else gotten creative with pizza toppings? I'd love some inspiration, since I'm getting ready for menu planning again.
