Sweet Corn and Black Raspberry Ice Cream

It is no secret that we love ice cream in the Coats household. Even though we eat ice cream year round, come summer ice cream eating is in full force! Now that we have a better ice cream maker we decided to call this summer, "The Summer of Ice Cream!" I know, it took us a long time to come up with that name.

The first flavor we wanted to try was one that Holli pinned from this site a long time ago. Sweet Corn and Raspberry. I thought to myself, "Corn in ice cream, that sounds crazy...crazy delicious!" Believe me when I say that crazy delicious doesn't begin to describe how good this ice cream was; and I do mean was because we just ate the last of it minutes ago.

Although this flavor seems exotic it didn't taste weird or crazy at all. It was very subtle and if you didn't know there was corn in it you wouldn't have guessed it. But once you know it's there you can pick it out. The black raspberry ribbons add a nice touch. The original recipe calls for regular raspberries, but we just got some fresh black raspberries from the farm so we went that direction. Blackberries will work too.

So let me just throw out a couple of names of flavors we are looking at making this summer:  Thai Pineapple Curry, Roasted Cherry and Coconut, Spicy Dark Chocolate, Lemon Ginger, Pineapple Upside Down Cake, Mexican Corn, Tres Leches Cake with Roasted Strawberries, and much much more!  Which ones are you most excited for?
