Ok now that you are in a good mood let me explain the beauty that is Mexican corn and why that is the only way we eat it in our house.

The basic idea is you roast or boil your corn, cover it in mayo, dust it in salt and chili powder, and squirt it with lime juice. You can also dust it in some crumbled queso. A lot of people will tell you that this is gross or crazy. I am telling you it is wonderful and delicious. But this is not a post about Mexican corn alone, it is about ice cream. If you didn't think I was crazy with the whole mayo and corn thing you are definitely going to think I am off my rocker eating it in ice cream form. If it is any consolation there is no mayo to be found in the ice cream.
Since we love our sweet corn ice cream, I knew we wouldn't be put off by the corn. I have to say we liked the sweet corn ice cream better than this one, but this one was still good. It uses a corn base and has hints of lime along with a little kick of cayenne. To top it off you sprinkle it with some paprika mainly for color. Unlike the sweet corn you leave some corn chunks in this. I chose to pulse the corn kernels in a food processor so they wouldn't be too big and icy. Like I said this one wasn't the best we made, but it wasn't bad. You don't hit a home run every time you swing the bat, but I would sat this was a base hit.
